Every single day in elementary school my mom packed peanut butter and jelly sandwiches. She would make them all on Sunday night. She would put 10 slices of bread out. It seemed like such a process. After they were made each sandwich were put in their separate bags for each school day. This was usually followed by carrots, pretzels & maybe a pudding. After six grade, I would have been happy to never see a peanut butter & jelly again. I don’t know if my mom spared the extra peanut butter or if it was the freezer burn but these were not the highlight of my lunch. I appreciate my mom making my lunches but I’m pretty sure she wasn't upset when I broke the news about wanting to buy lunch in middle school.
I have regained my love for PB & J’s – now toasted, (mostly pumpernickel bread) & with more peanut butter than jelly. I’ll probably make the same damn thing for my kids.

Peanut butter and jelly is awesome on toast, surprisingly better than the defrosted thawed out version we experienced in school.
You know, my mom is also guilty of sending me to school with sub-par peanut butter and jelly sang-wiches. As I recall she used to make them with the jelly on one side of the bread, which after several hours of being in my school bag soaked into the bread making for a soggy PB and J. To this day I still can't seem to make them like she used to. I loved them!
Just imagine how good they must have been when the jelly soaked after five days!! Rob & Kate - you loved these - you must have forgotten how good they were.
